The World’s 50 Best Restaurants list for 2025 has been unveiled, showcasing a diverse array of culinary excellence from 22 international destinations. This year’s ranking was determined by 1,120 industry insiders, including chefs and food writers, who conducted extensive evaluations of dining establishments globally. Notably, ten restaurants made their debut on the list, while four others made a reappearance. These selections reflect the dynamic nature of the global dining scene and highlight innovative chefs pushing the boundaries of culinary artistry.

At the pinnacle of this year’s list is Maido, located in Lima, Peru, helmed by chef-owner Mitsuharu ‘Micha’ Tsumura. Rising from fifth place last year, Maido has been celebrated for its unique approach, integrating Japanese culinary techniques with Peruvian ingredients in a style known as Nikkei cuisine. Since its opening in 2009, Tsumura has been dedicated to utilizing local ingredients, ensuring that his tasting menu remains fresh and seasonally inspired, with dishes that include an array of creative combinations showcasing the best of both culinary traditions.

The restaurant’s menu is substantial, typically featuring more than ten courses that exemplify Tsumura’s culinary vision. Signature dishes include innovative offerings such as The Triple, which includes avocado, eggs, and chashu (braised pork belly), as well as caracoles al sillao, a fusion of sea snails served with yellow chili foam. In addition to the tasting menu, diners have the opportunity to choose from an a la carte selection, underscoring the restaurant’s commitment to showcasing seasonal products.

Another city making a strong statement in this year’s ranking is Lima, which boasts four restaurants on the list, demonstrating its burgeoning status as a culinary capital. Joining Maido in the top ranks are Kjolle, which took the ninth position, along with Mérito at 26 and Mayta at 39. The prominence of Lima on the global culinary map is indicative of its rich gastronomic heritage and the innovative spirit fostered by its chefs, who are increasingly gaining international recognition for their outstanding culinary creations.

New York City also made a noteworthy appearance with Atomix landing at No. 12, marking it as the top restaurant in North America. Although Atomix has slipped from its sixth position in the previous year, it continues to be celebrated for its detailed presentation and the overall dining experience crafted by chef Junghyun “JP” Park and his wife Ellia. Their meticulous attention to the aesthetic appeal of each dish, paired with the use of beautiful ceramics, contributes to Atomix’s esteemed reputation within the global dining community.

The 2025 list is a testament to the ongoing evolution of gastronomy worldwide, where esteemed culinary establishments bring forth not only exquisite flavors but also innovative dining experiences. The inclusion of such a diverse range of restaurants from various countries reflects the rich tapestry of global culinary traditions and the modern chefs finding inspiration in their cultural backgrounds.
