Growing up in Nara, Japan, tofu was a constant in my home and a staple that I carried on to my own children. When I moved to the U.S. in 1994, tofu was harder to come by, but I always made sure to keep it on hand, as it was a way for us to connect with our Japanese roots. In Japan, tofu is enjoyed by people of all ages, including my 95 and 88-year-old in-laws who have it daily and credit their longevity and immunity to this routine. Tofu has always been my number one kitchen must-have due to its health benefits, versatility, and delicious taste.
Tofu is made from soybeans and nigari or calcium sulfate and contains all essential amino acids found in animal products but without cholesterol. It is a healthy and plant-based alternative to meat and dairy products. Tofu is also economically and environmentally friendly, as it takes much fewer greenhouse emissions to produce tofu compared to beef or poultry. It is also cost-effective, with organic tofu being more affordable than many meat options. By incorporating tofu into your diet, you can feel better, save money, and contribute to environmental sustainability.
Tofu is not only healthy but also versatile and delicious. Its subtle flavor allows it to be used in a variety of dishes and cuisines. As a nutritionist and cooking instructor, I enjoy experimenting with tofu in recipes such as pan-fried dishes, soups, salads, dumplings, veggie pancakes, burgers, and even desserts like tofu chocolate pudding. One of my favorite ways to enjoy tofu is in a simple tofu miso soup with seasonal vegetables and grains. Another easy and delicious meal is hiyayakko, cold tofu topped with nori, sesame seeds, and other toppings.
Using tofu in your cooking can open up a world of culinary possibilities and provide a healthy and tasty alternative to meat and dairy products. Whether you are looking to improve your health, save money, or reduce your environmental impact, tofu can be a great addition to your kitchen. As someone who has grown up with tofu as a staple in my diet, I hope to inspire others to incorporate this versatile and nutritious ingredient into their meals. Tofu has been my best friend for happy living, and I believe it can be a helpful and delicious addition to anyone’s kitchen.
